A wonderful spice blend for making blackened style foods including chicken, fish, pork, and beef.

Equipment

  • 1 Mason Jar or acceptable alternative for storage
  • 1 Bowl for mixing

Ingredients
  

  • 14 gram paprika 110 ASTA if available
  • 5 gram ground hot pepper
  • 7.2 gram granulated onion or powder
  • 3 gram granulated garlic or powder (can be left out too)
  • 3 gram ground black pepper butcher grind or course
  • 1 gram kosher or sea salt
  • .6 gram dried basil
  • 1.8 gram dried oregano
  • 2 gram dried thyme
  • 1.2 gram white pepper

Instructions
 

  • Put all spices in a bowl and blend well, ensuring that all of the spices are well incorporated.

Notes

We use half regular paprika and half smoked paprika. Use high quality paprika, it will make a difference to end product
Use whatever hot pepper you would like. cayenne is the default people use, although I find cayenne hot for no other reason than to be hot. We use Ancho & a touch of either ground chipotle or ground habanero.
We do not add garlic to the recipe. I have a sensitivity to it so it gets left out. I include it here because that is normally included
We use this spice blend at home all of the time, so we usually make this recipe 5x the size you see in this ingredient deck. That's how much is in the mason Jar in the Picture.
